Dori in cream sauce with mushroom

※3 pieces dori fish fillet
※a box of fresh mushroom
※1 pack of low fat cream
※garlic powder, salt, pepper to taste

use foil cover the pan, apply some cooking oil on pan evenly. lay the dori fish(marinated with some salt and pepper before cooking) on the pan, cover with sliced mushroom.

empty the cream in a bowl, mixed with a bit of salt, then pour on the pan cover the fish and mushroom, sprinkle garlic powder(add a bit more if you like garlic) on top, then cover the pan tightly with foil. bake at 250°C for 15 minutes, uncover the fish bake for another 5 minutes with upper heat, done.

Baked Tuna Pasta

Decided to try baking pasta on Saturday after getting the idea from Children’s recipe book. Here’s what we need:

Ingredients:

80g tuna (chunks or flakes), mash them up

3 oz pasta (any shapes)

5 oz milk

1 egg

4 tbs of grated cheese (I used mozarella)

Method:

Preheat to oven at 190 degrees C

Boil pasta till it’s cooked.

Mix the tuna with the pasta together.

This is how it looks like…

Then pour the milk into a bowl, break the egg in and stir

Add 2 tbs of grated cheese into the egg mixture…and here’s how it looks like.

Pour the pasta + tuna mixture into small oven proof dish.

Then pour the egg mixture into the pasta + tuna mixture.

Sprinkle the remaining grated cheese ontop, bake for 15-20mins.

If you bake for 15 mins, there will be some remaining juices after that, a lil bit of soup I should say. If you bake for 20 mins, it’s all dried up. Depends whichever you like, I tried both :) .

And here’s the final product. The top is crusty and looks burnt because of the cheese (if you don’t want it to be burnt like this, put the cheese much later - 5mins before ready).

And he’s the filling…yummy…Faythe finished 3/4 bowl of it :) .

Lemon and Herb Salmon

This dish is really simple… and takes very little of your time.

What you need:

200g salmon fillet

McKormick’s Mixed Herbs

Juice of 2 lemons

Salt and pepper

Method:

Place the salmon fillet on a piece of aluminium foil. Season with salt and pepper. Leave aside for 10 minutes.

Warm your oven/grill to 150′C. Before you put the salmon into the grill/oven, squeeze the lemons all over the salmon and sprinkle a generous amount of mixed herbs on it.

Cover the aluminium foil and grill/bake for 15 minutes.

Once the juices run clear, serve hot with mashed potato or rice.

Spring Onion ginger fish 姜葱鱼片

* any white fish, sliced. Use a bit soysauce and starch to marinate.
* Spring onion (cut into 3cm lenght) and ginger (sliced), depends how many you like.
* salt and paper to taste.
* half rice bowl of water mixed with one table spoon of starch powder.

Heat wok with about 1 1/2 rice bowl of oil, slightly deep fry the fish (过油), set aside. removed the oil left about 1 - 2 table spoon of oil in the wok, put in the ginger and spring onion, fry for about a minutes, add in the fish, fry for about 2 minutes, add the starch water, salt and pepper to taste, see the sauce become thicker, off the heat, done.

Eggplant bake with Dory Fish

I personally likes brinjal and always attempt to cook it but of the so many times I’ve tried, 90% of it failed!! But since I’ve not tried baking it, I did my first attempt of baking
eggplant, and the outcome was perfect!!! It smelt like pizza hahaha……

Serves: 3 adults, 1 toddler

Preparation Time: 20mins, incl. cutting and marinating

Cooking Time: 15-20mins

Ingredients:

  • A good handful of shredded mozarella or normal cheese
  • Dory fish 1 piece, slice into small pieces
  • 1 round eggplant (small to medium size), cut it half, then slice it thin
  • 1 Lemon, juice it
  • A dash of salt (for marinating the dory)
  • Butter (for lining the baking tray)
  • 1 tablespoon of McCormick mix herbs

Steps:

  1. Line the baking tray with a layer of butter
  2. Put the slices of dory fish on the tray, arranging them nicely if you could
  3. Dash some salt ontop of the dory fish and leave it marinate by itself for 3-5 mins
  4. Then dash the McCormick mix herbs carefully on each of the dory fish slices
  5. Use a teaspoon and carefully scoop up some lemon juice, just lightly go over the dory fish so that it has the lemony taste
  6. Arrange all the eggplant on top of the dory fish
  7. Sprinkle cheese on top of the dish…as much as you want if you love cheese
  8. Put the baking tray into *pre-heated* oven and bake at 200* for 15-20minutes

And here’s the result

The eggplant is so soft and with the cheese on top…..yum yum..I just love the taste and smell of it.

The dory fish at the bottom is still soft and just nice, with some lemony taste and mix herbs too.

cream cheese fish tortilla

I bought this wholemeal tortilla in Giant, there are few more brands from different bakery, I will scout around more on the next grocery shopping.

I cut the round tortilla to 8 pieces, like a pizza –

topping tortilla
scoop the filling on the cut tortilla, scatter some parmesan cheese on top.

put it into the oven, bake under 150℃ for about 10-12 minutes –

Done, easy and nice snack or finger food.

Sometime I just cut the tortilla into strips, bake till crispy, let my girls eat it plain or dip with jam, or chocolate, they love it.

Cream Cheese Fish Puff

The filling — cream cheese fish, I made it the night before, and keep refrigerated, refrigerated filling make the puff folding more manageable.

First to cook the filling –

  • 1 piece of frozen Dori fish, diced.
  • few bunchs of chive, minced.
  • 1/2 clove of garlic, minced.
  • 5-6 shallots, minced.
  • 1 rice bowl of whipping cream.
  • 1 rice bowl of Parmesan cheese.
  • salt and pepper to taste.
  • Heat two table spoon of cooking oil in sauce pan, fry the shallot and garlic till fragrant, add in the chive and fish, stir fry for a while add in the cream, till the fish cook, turn to lower heat add in the parmesan cheese, stir till the cheese melt, off the heat, transfer to a shallow dish, wait for it cool and keep refrigerate.

    To make the Cream Cheese Fish Puff, we need the puff pastry sheet –

    I got this from Tesco, not sure Giant or Carrefour have it. Or can get the filo pastry from Cold Storage (if you happen to read the recipe from oversea, and couldn’t find the alien ingredient from the three hypermarket, can try look for it in the Gold Storage, or Mr. Ho Gourmet Corner
    both carry a lot of imported condiments.

    separate the pastry sheet, and it take about 10 minutes to thaw the pastry —

    When it thawed, it is easy to fold.

    scoop the filling place on the pastry sheet, apply some egg on the edge, and fold it. use the fork press the edge to tighten the fold, also add a bit design on it.

    All done, brush some egg on the surface, place it in the oven (pre-heat the oven at 220℃for 5 minute before the put in the puff), bake for 20-30 minute at 220℃, or until the puff turn golden brown.

    Done. I made 10 puff, but two of it the edge open, and the cream leaking, but at least the other 8 looks nice and presentable, and of course tasty.
