Simple soup (Chinese celery with egg)

Portion — 1 person.

  • 1-2 stalk of Chinese celery, Diced.
  • a tea spoon of ginger or garlic,
  • 2 table spoon of sesame oil/cooking oil
  • 1 cup of water
  • salt and pepper to taste

heat the wok, heat about two table spoon of sesame oil (or just cooking oil), put in the garlic or ginger, then break two eggs, stir it, see the egg begin to cooked, pour in one cup of water, add salt and pepper, wait till it boiling, then off the heat and put in the Chinese celery, done.

Simple soup (with prawn broth)

For two 3 years old kids portion

  • 1 piece of frozen prawn broth (after thawed make up about one rice bowl contain),
  • 1 tomato diced (or some chop spinach, sawi, or any veggie),
  • 1 egg (optional),
  • a bit of chop garlic.

Hot wok, fry garlic, veggie, and egg, put in the broth, bring to boil, done.

Prawn broth

  • 30-40 medium prawn shell + head,
  • 4-5 slices of ginger,
  • 1-2 table spoon of cooking oil,
  • 2 litre of water,
  • Salt to season

heat the wok in high heat, throw in the ginger and prawn shell, stir fry till it fragrant and turn red, pour in about 2 litre of water, bring to boil, salt to taste –-

Then sieve it–

*What I do is pour it into a big container, till cool store it in the freezer. After it frozen, take it out and break it into big pieces, take the amount I need whenever I cook soup or steam egg.

Euro-Deli’s Smoked Pork Knuckle

  • 3 carrots,
  • 5-6 stock of celery,
  • 1 big onion (about the size of the rice bowl!),
  • 4 tomatoes,
  • 1 clove of garlic,
  • 1 table spoon of pepper
  • salt to taste (the smoked pork knuckle is quite salty itself, so taste the soup before add more salt)
  • 1 Euro-Deli smoked pork knuckle,

all cut into chunk.

Deep fry one grove of garlic in the wok, throw in the knuckle chunk, stir fry till brown, then add in all the veggies, fry for a while, pour in about 1.5 litre water, let it boil, then transfer all into the slow cooker, add a tea spoon of ground pepper, cook overnight.

It was heaven… if don’t take pork, the Euro-Deli’s smoked turkey wing also work well.

White Radish, Carrot Mutton Soup

  • 4 big pieces lamb chop,
    (boil the mutton with hot water for about 10 minutes, then rise with cold water, wash away the frothy scum on the mutton, then the soup will be clear after hours of cooking.)
  • 1 radish,
  • 2 carrot,
  • 1 piece of ginger about the size of half of our palm,
  • 1 table spoon of white pepper.

All throw into the slow cooker, by the time my parent came for dinner, the mutton soup was just nice.

Have it with the chop garlic and soy sauce, the garlic and the mutton - - perfect match :) …yummy…
